Udon with Vegetable Umami Dashi

Udon Noodles made with Kuze Fuku & Sons Vegetable Umami Dashi Soup Broth.


Serves 1
  • 1 packet ★Vegetable Umami Dashi

  • 1 Chicken fillet

  • 1 Shrimp tail

  • 90g Udon Noodles (dried)

  • 300mL Water

  • 1.5 Tsp Fish Sauce

  • 1 Tsp Lemon Juice

  • Pak choy (as desired)

  • Lime (sliced into rounds)


Put water and Vegetable Umami Dashi packet in a saucepan and heat to make soup stock according to product directions. Remove packet and remove broth from heat. Add fish sauce and lemon juice and chill. Sprinkle salt and sake over chicken, microwave for 2 minutes, remove from heat and break into pieces. Shell and boil the shrimp. Boil water in a pot and cook udon noodles. Drain noodles and place them in a bowl. Pour broth mixture on the noodles and top with chicken, shrimp, lime, and pak choi.
