Minestrone with Root Vegetables

Tasty minestrone made with Kuze Fuku & Sons Vegetable Umami Dashi.


Serves 2
  • 100g Potatoes

  • 50g Carrot

  • 1/2 Onion

  • 100g radish

  • 10cm Burdock Root

  • 50g thickly sliced Bacon

  • 1 Tbsp Oil

  • 150 ml Water

  • 200ml Tomato Juice (unsweetened)

  • 1 packet ★Vegetable Umami Dashi

  • Italian Parsley, to taste



Cut vegetables and bacon into 1cm cubes. Heat oil in a pan and fry the bacon. When all the oil has been cooked off, add water, tomato juice and vegetable broth and bring to a simmer. When vegetables are tender, place in a bowl and garnish with Italian parsley.
