Ginger-scented Cabbage Rolls with Vegetable Umami Dashi Dressing

Ginger scented cabbage rolls made with Kuze Fuku & Sons Vegetable Umami Dashi.


Serves 2-4
  • ★Vegetable Umami Dashi (1 packet)

  • 400 mL Water

  • 4 Cabbage Leaves

  • 50g Onion

  • 1/3 stick Carrot

  • 150g Chicken Breast (minced)

  • 150g Chicken Thigh (minced)

  • 20g Grated Ginger

  • Salt & Pepper (1 dash each)

  • 2 Tbsp. Bread Crumbs

  • 1 Egg

  • 1 Tbsp Milk

  • 2 Bay Leaves




Boil water in a pot, add salt (not including salt in the ingredient list above), and boil cabbage. Finely chop onion and heat in a microwave oven at 600w for 2 minutes. Prepare Vegetable Umami Dashi broth according to package instructions. In a bowl, combine chicken, grated ginger, salt, pepper, bread crumbs, egg, and milk, knead well, divide into 4 equal portions, and wrap with boiled cabbage. Put cabbage rolls in broth, cover, and simmer over medium heat for 10 minutes. Add carrots sliced lengthwise with a peeler and cook for another 5 minutes. Serve.
