Soba Noodles with Deep Fried Vegetables in Fruit Vinegar Marinade

A healthy serving of Japanese soba noodles topped with deep-fried vegetables drenched in a marinade sauce made from Kuze Fuku & Sons Organic Fruit Vinegar Drink - Concord Grape.


Serves 1
  • 1 eggplant, peeled and sliced

  • 1/2 zucchini, peeled and sliced

  • 5 Shishito Peppers

  • 1/8 bell pepper, green and/or yellow

  • 3 Tbsp. Kuze Fuku & Sons Concord Grape Fruit Vinegar

  • 3 Tsp. soy sauce

  • Oil

  • 1 serving of Soba Noodles


Peel and slice the vegetables into bite sizes. Poke holes in the shishito peppers with the tip of a knife. Deep fry in oil at about 340 F. Remove from oil and marinate in vinegar and soy sauce. Serve atop soba noodles.
