Instructions.

  • 1 Preheat your oven to 350°F and grease an 8-inch square pan or line it with parchment paper (leave some overhang for easy cookie bar lifting!).
  • 2 In a bowl, whisk together flour, baking powder, sea salt, cinnamon, nutmeg, and ginger. Set aside.
  • 3 In a separate bowl, combine melted butter, brown sugar, and rum. Add the egg, egg yolk, and maple syrup until combined.
  • 4 Pour your wet ingredients into the dry mix, and stir until smooth and thick.
  • 5 Spread the batter evenly into your pan. The batter will be thick.
  • 6 Slightly heat up your Chocolate Spiced Rum Spread until it is a little runny. This will help you with the swirling pattern we are about to do.
  • 7 Place teaspoon sized dots of the spiced rum chocolate spread in uniform rows on top of your batter.
  • 8 Now here comes the fun part, with a toothpick or butter knife, swirl the chocolate spread into the batter. There’s no formula here, get as swirly as you would like.
  • 9 Bake for 30-35 minutes. You’re looking for a toothpick with just a few moist crumbs. Get ready for your kitchen to smell like a holiday Hallmark movie.
  • 10 Let your cookie bars completely cool before enjoying!
